These look so yummy! I'm wondering where you find the dry cottage cheese. A family favorite that has been passed down from my grandmother is veranika (sp?) which also calls for dry cottage cheese. I haven't been able to find it at local grocery stores. Is there a way to use the regular cottage cheese for these recipes?

I would say reduce moisture by just adding the yolk of the egg or add more flour.

Superstore and Safeway have dry cottage cheese, "Foremost"

Yummy Yummy!!! I too remember these. Although my memories are more of Dad making them....regardless who made them they were always very tasty. Haven't made them in a while, but after seeing the posted picture & recipe, will definitely be making them in the very near future...thanks again Betty!!

I'm not sure if mom ever made these...the name sounds familiar. Yum...this looks good Betty and like something I should definitely try. I'll tell you how they turn out. Would they have been served with any sauce ever? Like a sour cream sauce? Just trying to remember them.

leraningtofollow..I have a friend who makes verenecki using creamed cottage cheese, she drains the liquid in a sieve then using a spoon or fork to press the last of the liquid out. Might just work for these cakes too..maybe a bit more flour as well.
Trish..my Mom never served these with applesauce..we ate them plain..you could eat them with a sour cream sauce.
Norma..yep I remember dad making them too..he was always in the kitchen!

I remember the name...and think my grandma made these...but I wasn't ever willing to try anything with cottage cheese 'back in the day'. Now's the time to give it a try! I'm thinking they'd be perfect with Roger's golden syrup.

I can't remember ever having these, but I think they would taste good with sugar, for some reason. I also prefer Verenike pan fried and then sprinkled with sugar.

Glums Koki were a common dish in our family. As a kid I wasn't very fond of them though! Definitely a Mennonite recipe from the Old Country.

My mom used to make a Glums Platz..which I'm sure is very close to this only in a cake form..If anyone would have a recipe for that I would be very happy to have it. She also used dry cottage cheese and I know that it can often be found in the freezer section of some stores too.

If you can get it where you are, Michigan brand Cottage Cheese is dry! Love it! And whoa ... those look delicious.

we use semolina instead of flower and also add raisins. If semolina is used, you need to set mixture aside for 20-30 minutes for the semolina to become moist. Then the texture of cakes will be better.
