    Currently, I’m in charge of ordering, delegating tasks to line cooks, making prep and par lists, assisting in ordering, putting away orders and assisting with menu changes. We frequently do wine dinners in which I help create a 5 course menu according to season. I mainly run expo on high turnover nights, although I do have to jump on the line as well.     I currently work open to close alone, entailing setting up cold and hot line in a timely manner, making a par and prep list to have all menu items ready for service, and set up equipment. Throughout the day I receive and make orders, and manage all stations accordingly, including expo. To close, I make another par list to see what I’ve gone through, break down equipment, follow food safety guidelines in terms of storing and discarding food. Otherwise, I assist my chef in inventory, creating specials, and working high volume weekdays and nights. Recently, I helped build an entirely new menu, which required a lot of trial and error with taste tests, ingredient changes and creating a whole new par/inventory list.

    As lead line cook, I hopped between stations (sauté, flat, and hot expo) to ensure food and plating is up to par. Occasionally, I run cold expo and pantry, so communication with the line and servers is detrimental to the whole restaurant. On the line, I am responsible for communicating with my team about how long my dish has until it’s ready to be plated, when they can start their dish, and pushing for perfect ticket times. Before service, I’m responsible for prepping what my station needs and making sure that every other station is ready as well. I also assisted in plating and creation of dishes. When I began at McGregor’s, I started at pantry, and then learned every station before the sous chef himself did. I began at $11 and worked up to $14 an hour in less than a month.

I started as a fry cook but was promoted to a line cook after a month.
